Whether you are opening a restaurant or renewing your menu, Francois will be glad to help you with menu development, equipment, and waitstaff training. He brings 40 years of experience in all facets of the food business
Francois will come to your home and prepare the meal you desire, bringing all the ingredients unless you can furnish them. He will help you choose the menu and appropriate wines for two or more.
PRIVATE COOKING LESSONS
Whatever your expertise or lack thereof, Francois will teach you the basics, such as proper use of knives, and enable you to prepare a simple, sophisticated meal or the gourmet dinner you never imagined you could master. He also can teach you baking skills he has acquired over 40 years, beginning as apprentice to his father in a Swiss bakery.
For the past 30 years, Francois has prepared gourmet meals on raft trips on the Rio Grande in Big Bend National Park and on Rio Chama in New Mexico. He can teach you how to choose menus that lend themselves to travel with minimal refrigeration, and how to pack, convey, prepare and serve exquisite meals. Always essential in the wild,
